This seafood dish is a wonderful example of how a few simple ingredients can come together in just minutes to produce an elegant, delicious meal. Tilapia, a mild-flavored, flaky white fish is simply seared then slathered in a homemade chipotle-spiked orange marmalade. After a brief stint in a hot oven, the fish is moist and tender and the sweet-spicy glaze perfectly caramelized. Now tell me, doesn’t that make your mouth water.
serves 6.
½ cup orange marmalade2 tablespoons freshly squeezed orange juice1 tablespoon chipotle in adobo, mashed to a pasteKosher salt2 tablespoons olive oil2 pounds fresh tilapia fillet, cut into six 5 to 6 ounce pieces
Preheat an oven to 375F.
In a bowl, combine the orange marmalade, orange juice and chipotle. Season with salt.
Warm the oil in a large heavy frying pan over medium high heat. Make sure the pan is large enough to accommodate 6 talapia fillets without overlapping. Add the fish and sear on one side. Turn the fish and spoon all of the marmalade/chipotle mixture over the fish.
Place the pan in the top third of the oven and cook until the fish can be easily flaked, about 4 minutes.
Remove from the oven and place on serving plates.
Wine Pairing: Sauvignon Blanc or Unoaked Chardonnay
